Weekend Recap

HEY ALL. I hope you had a fabulous weekend. I have been busy and exhausted as we work on moving out of our apartment. We’re going to be staying at Nick’s dad’s house in Elkins until we leave for Florida so that’s fun! I’m excited to spend some time there.

Friday I was off so I packed and cleaned all day! Literally by noon I was pooped. But I did eat some yummy stuff which I ate on the floor. I had my usual bowl of oats for breakfast… I am THE creature of habit. I need to work on that. I did get in a workout sometime in between all the messiness of packing. For lunch I ate a yummy sandwich with some chicken, hummus, and veggies and some popcorn. Oh, and Theo’s chocolate. Then I packed and cleaned some more. I snacked on a couple dates with almond butter when I got hungry.

Nick and I had to run a few errands when he got off so I made us an early dinner of tacos before we left. Lately I have enjoyed taco salads so that is what I went with tonight. Then we headed to Morgantown to do a few things. We (spontaneously) stopped at Dunkin’ Donuts for a snack. I went with the Maple Glazed and it was delicious.

I worked all day Saturday. This ended up being my last day at the Joe… tear. For breakfast I had some oats (shocker) and a latte (2 pumps vanilla, cinnamon, macadamia milk). For lunch I had a sandwich with chicken, white cheddar, shredded carrots, mustard, and hot sauce along with some popcorn. I definitely forgot to take pictures of either but such is life. I snacked on a couple energy balls sometime in the afternoon. Guys, these are delightful. You can find the recipe here. You can’t go wrong with chocolate and peanut butter. You just can’t.

After work I went grocery shopping (snacked on a banana in the process) before going home. I made the most random dinner. A O’ Dough’s bagel, 1/2 with cream cheese and 1/2 with hummus, scrambled eggs and sliced roasted turkey, 1/2 a sweet potato, and steamed veggies. I know. It made no sense but it was fast and easy. I spent the evening cleaning and packing some more. I also played the ukulele for a bit to wind down. I wasn’t super hungry before bed but I knew I would wake up starving if I didn’t have a little snack so I had an Rx bar.


Sunday morning I had some coffee + read scripture + ate a banana before doing a short workout. Breakfast ended up being a perfect bar because we started packing up things to take to Elkins. It was so much work! On the way we stopped at Panera Bread for lunch. We actually planned on Chick Fil A but silly us… they’re closed on Sunday. But Panera was yummy. I got the whole turkey sandwich with a side of chips and literally devoured it. We unloaded the car and stopped by Nick’s grandma’s. I also stopped for a vanilla almond milk latte.

On the way back home, we decided to stop for dinner because, uh, convenience. We stopped at Buffalo Wild Wings. We started with the spinach and artichoke dip which was gone in no time. I also ordered a Moscato which was a great life decision. For my main meal I got the chicken quesadilla which did not disappoint. I ate all of it but one of the slices. Apparently I was hungry.

We didn’t get done until around 8 pm and I crashed. This morning I took a little bit of time to read and have coffee. I didn’t sleep well last night so today is going to be a long day. I probably won’t work out because I think it’ll cause more harm than good today (which is a recent mindset that I am so thankful for). We have about two trips to make to Elkins before we’re finished. That’s about six hours in a car! Fun! The worst part about it all is that we have to move everything to Florida in a couple weeks. I’m cringing as I write that.
