Weekend Recap

Happy Monday, y’all. I had a good weekend and I think that I’m finally getting rid of the cold that I’ve had forever. I worked all day Friday and Saturday so I was at the coffee shop all day.

Friday evening we went to our favorite restaurant, Mia Margherita’s, and had dinner with a couple from our old church. Despite how sick and tired I was, I really enjoyed it! I started out with their house salad, and then Nick and I shared a large pizza. Half of it was Nick’s choice and the other half I chose their chicken pesto pizza and it was FIRE. I loved the flavor and fresh tomatoes on top. Not to mention, it was the size of my face. I ended up having two slices. Afterward, we decided to stop in at sweet frog for dessert.

 

Side note: I most definitely ate way passed fullness. Learning to eat intuitively and listen to my body is hard, especially after years of dieting and disordered eating. It’s not always pretty or spot on, but that’s the freedom of it. It’s not always black and white. It’s not just eat when you’re hungry and stop when you’re full. I don’t have to feel guilty or binge because I “messed up.” Instead, I can be curious and acknowledge how it made me feel physically and mentally and then use that knowledge next time I am in that situation. Ok, that is all.

Afterward we were exhausted so we went straight home and went to bed. Saturday morning I made some coffee and read scripture. After awhile I ate 1/2 a banana and did a Fitness Blender’s 30 minute yoga video. I got ready and opened up the coffee shop. For breakfast I had a bowl of oats that I brought with me. It had oats, siggi’s vanilla yogurt, almond milk, chia seeds, walnuts, banana, and almond butter. I also had a latte with macadamia milk and a pack of cane sugar.

 

For lunch I packed a taco salad using romaine, shredded carrots, these blue tortillas, mozzarella, salsa, and leftover chickpea pecan “taco meat” from Hummusapien and one of my healthy chocolate chip cookies. PS – the bowl in the picture below is my absolute fave! I bought it from Walmart for 5 bucks and it has a lid that goes on top so you can take it to go. It’s wonderful.7D3DA2F0-98BF-44DC-90E6-B3E349A3C09F.jpg

I ended up getting to leave work early (thanks Mr. Manager – if you know you know) so that was fun. I decided to get our groceries and apparently everyone goes grocery shopping on Saturday so I will probably never do that again. I snacked on a Lara bar while I shopped. When I got home I put the groceries away and made myself a sandwich with oven roasted chicken, an egg, tomato, lettuce, and hummus. I had some popcorn on the side. I ended up just having this and random snacks and called that dinner. I had some more of my cookies and some hot chocolate which is so yummy! The recipe for it: 1 cup choice of milk, 1 tbsp cacao/cocoa powder, 1 tbsp maple syrup, 1/4 tsp vanilla extract, and a sprinkle of sea salt. I cook it all on the stovetop.

Sunday morning I slept in (until 7:30 LOL) and had some coffee while reading. I ate a banana with almond butter and then did a lower body workout. I ate a perfect bar shortly after while getting ready. Then I made myself a sandwich. I don’t know what it is with me and sandwiches lately but I’m really into them. Afterward Nick and I went to Almost Heaven Desserts and Coffee Shop. I got a latte but it was not very good at all so that was sad. But I took a couple of cookies home with us. We got chocolate chip, white chocolate macadamia nut, and sugar cookie. Yum!

We went to the church for worship practice and spent the rest of the afternoon/evening there. Beforehand I snacked on a yogurt bowl: siggi’s vanilla greek, banana, walnuts, dark chocolate chunks, and crunchy almond butter. Guys, I am pretty much 50% banana/almond butter/chocolate and 50% coffee.

After church we went home and had dinner and watched Netflix for the evening before heading to bed at 8:30. Yup, that’s right. No shame. For dinner I just made the same taco salad I had for lunch Saturday. I also had a big bowl of popcorn and a date with almond butter before bed. I always have a snack before bed or I wake up absolutely starving. Anyone else?

This morning I am working on some blogs for this week (including the life change post) and I just finished making some pancakes that’ll be going up on the blog on Wednesday because it’s NATIONAL PEANUT BUTTER DAY YES.
