Healthy Chicken Salad

This salad is full of flavor and full of nutrients! With grapes, almonds, apples, and chicken, you’re tastebuds are in for a celebration.

Yesterday we went to lunch at Panera, one of our favorite spots. We don’t go very often because the prices are insane. We each got a whole sandwich and then gave each other one of our halves. I had the turkey cheddar apple panini and Nick got the almond chicken salad sandwich. They were both incredible! The chicken salad sandwich was definitely my favorite. Every flavor came together and burst in your mouth.

After eating it, we both decided I needed to make some. I don’t know why I never have. It is so simple and what an easy way to pack our lunches! I baked my own chicken in the oven and then diced it. You can buy a rotisserie chicken or use whatever else you prefer/have on hand. This is the mayo I used! I am a fan of the ingredients. Use whatever mayo makes you happy.

I only used about 12 oz of chicken for this (it was 1.5 lbs raw). It can easily be double. All you need is 8 ingredients: chicken, grapes, an apple, onion, mayo, almonds, salt, and pepper! Then you throw it all in a bowl and BAM, you have some bomb chicken salad. Put it on bread, lettuce, crackers, or go wild and eat it by itself.

Healthy Chicken Salad

  • Servings: 6-8

Ingredients:

  • 12 oz chicken, cooked and cut into bite sized pieces
  • 1/2 cup red grapes, diced
  • 1/2 green apple, diced
  • 1/3 cup red onion
  • 1/3 cup sliced almonds
  • 1/3 cup + 2 tbsp mayo (more or less depending on YOU)
  • 1/2 salt
  • 1/2 pepper

Instructions

  1. Put all of the ingredients into a large bowl and mix well. Add more mayo as needed. That it!
  2. Store in fridge for 3-5 days!
